Roasted Veteables

Ingredients

2 - 3 carrots peeled, sliced thick and different shapes
1 beet, peeled and chopped small
1 zucchini sliced in an angled cut
1 - 2 tablespoon fat -  ghee, coconut oil, avocado oil
sprinkle salt and oregano to taste

Directions

Place on cookie sheet lined with parchment paper.  Drizzle fat over vegetables. Sprinkle salt and oregano.

Bake at 375 degrees for 45 minutes or when done.

Stir occasionally and checking when done.

Notes

Use different veggies and spices to create a different look and taste.
