Cheesecake - No-Bake

1 - 9" deep pie dish


12 oz cream cheese 

16 oz sour cream

1/2 cup honey

1 egg and 1 egg yolk

1 tsp vanilla extract

2 tsp gelatin

1/4 boiling water


1. Beat the cream cheese, sour cream, and honey until very smooth.  

2. Add eggs and vanilla extract and beat again until smooth. 

3. Dissolve the gelatin in the hot water and then slowly add to the remaining cheesecake batter, whipping well to incorporate.  

4. Pour this batter into 9" deep pie dish and refrigerate until firm.
