4 - 6 servings
1- 2 tablespoons fat of choice
1 onion chopped
1 small to medium cauliflower cut into florets
1 small green cabbage cut into 1 inch pieces
2 teaspoons dried dill weed
2 quarts of homemade broth or meat stock
2 zucchini peeled and sliced 1/4 inch thick
1. Chop onion and saute in fat of choice.
2. When onion is soft add cauliflower florets and cabbage pieces.
3. Add dill weed and stir.
4. Add broth and bring to a slight boil.
5. Add zucchini.
5. Then simmer slightly covered for 20 minutes or until done.
Any type of good fat is good in this recipe. You can use: avocado oil, lard, ghee, olive oil, butter
Zucchini cook up really quick so I often will add then toward the end of cooking.
This can make a real nice blended soup.
